Expanded Food and Nutrition Education Program (EFNEP)

EFNEP is a cooking and nutrition course CEAP hosts from the University of Minnesota Extension. A Community Nutrition Educator leads a series of classes geared towards parents with children. The class provides hands-on, learn-by-doing approaches that allow participants to gain the practical skills necessary to make positive behavior changes. This class is offered in English and Spanish.

Sample Curriculum

Week 1: Lesson – MyPlate focus and proper portion sizes of each food group.

               Recipe – Turkey Veggie Wraps

Week 2: Lesson – Good sources of calcium and how much the body should get.

               Recipe – Skillet Lasagna (pictured above)

Week 3: Lesson – Eat a rainbow of fruits and vegetables and incorporate them in every meal.

               Recipe – Vegetable Frittata and Fruit Smoothies

Week 4: Lesson – How much sodium we should be eating and hidden sources.

               Recipe – 20 Minute Chicken Creole

Week 5: Lesson – Sugar content of popular beverages.

               Recipe – Easy Pumpkin Pie and Salad with Homemade Dressing
